Fiddleheads

Fresh picked fiddleheads. These are the young unfurled shoots of the ostrich fern. Taste is somewhat similar to asparagus.
Do not eat raw–they should be cooked in salt water for a couple of minutes and the water discarded. Then you can sauté them in butter for a few minutes or use them any way you like.
